OUR WINES

Wine, people and place.

Why Australian wine, how we choose it, and the experience we hope to share.

WHY AUSTRALIAN WINE

A glass that brings you back to a place.

We want to share wines we love—and the pleasure of getting to know them.

Living in Melbourne and visiting wineries opened our eyes to the variety of Australian wine. The depth of Shiraz, the delicacy of Pinot Noir, the richness of Chardonnay: even within a single variety, there was so much to explore. Discovering those differences became part of the pleasure.

We were just as drawn to the chance to get to know the makers. A glass could bring back a vineyard, a conversation or a memorable visit. Knowing the story made the wine feel more personal. That is an experience we want to share in Japan.

You do not need to study wine before enjoying it. Start with a glass at the table, then follow your curiosity. We want to make that discovery possible with everyday bottles as well as wines for a special occasion.

WHAT WE LOOK FOR

A good story draws us in.
The wine has to earn its place.

Knowing the background can deepen our enjoyment, but we must first be happy to recommend the wine itself. These are the questions that guide our choices.

01 / TASTE

Would we want another glass?

We look beyond an appealing aroma or an impressive first sip, considering balance on the palate and what lingers afterwards. We look for pleasure in both powerful and delicate styles.

An easy-going bottle and a wine that rewards time deserve different expectations. We ask when and how each wine would be most enjoyable.

02 / VALUE

Would we recommend it at this price?

A wine that offers good value in Australia may be a different proposition by the time it reaches Japan. What matters is the relationship between its price here and the pleasure it brings.

We look for memorable wines at accessible prices, and a compelling reason to choose a more expensive bottle. Price and rarity alone do not define value for us.

03 / PEOPLE & PLACE

What gives it its character?

Who made it, where did it grow, and what mattered to the producer? A grape variety or regional name is a starting point. We want to understand the choices behind the wine.

Being small or family-owned is not enough on its own. Through conversations with producers, we seek an understanding of each wine that we can share in our own words.

04 / AT THE TABLE

Where would it belong?

Is it a wine to enjoy with a meal, or a glass to linger over? We consider the setting, the food and the people who might enjoy it when thinking about how to introduce it.

The story does not need to be a long one. Sometimes a single detail sparks an interest. For those who want to know more, we want to be able to take the conversation further.

FROM KNOWING TO SHARING

Find your own words for the wine.

At a tasting, we want guests to start with their own impressions. Taste first, hear about the place and the maker, then return to the glass. Your impression may change—or it may not. Either can lead to a discovery.

For merchants and restaurant teams, a personal reason to recommend a wine can be as useful as a tasting note. We aim to help you connect its story with your food, your setting and your customers’ interests.

Three questions to take to the table.

  1. What stayed with you after tasting it?
  2. How does its character connect to its place and maker?
  3. Who would you like to share it with, and when?

REGIONS WE ARE EXPLORING

Our search starts in Victoria.

Our time in Melbourne inspired SYNG. Heathcote and the Yarra Valley are two regions we are exploring as we build relationships with producers.

Our search is not limited to these two regions. We are also seeking wines from across Australia that we love for their taste and their connection to place and people.

Producers, wines and supply agreements have not been finalised.
